Pumpkin Chocolate Chip Pancakes

So easy and yummy. I just mixed up some Krusteaz pancake mix and added about 1/2 Cup pumpkin puree and some chocolate chips. Mix all together and now you're ready to cook! Makes a yummy Halloween breakfast! (makes about 7-8 pancakes if you're making more pancakes just add more pumpkin and chocolate chips) And for an even more fallish taste I'm sure they would taste great with a little bit of cinnamon mixed in with everything.

Honey Mustard Chicken

I did this the same way as the BBQ Chicken. Just put about 4 frozen chicken breasts in to the crock pot and pour a bottle of honey mustard on top and cooked on low for 4-6 hours. (mine cooked in about 5). Then just shred chicken while still it's in the crock pot and then serve over rice. So tasty!

Shredded BBQ Chicken

I know that my Mom makes this sometimes, but I saw a recipe for this online and I forgot how easy this is! It reminded me of how much I LOVE my crockpot and how much I LOVE to eat chicken cooked in the crock pot. This is a two ingredient recipe! So Simple.

4-6 Boneless Chicken Breasts ( Mine were frozen too. First time I have ever just put it in and walked away!)
1 bottle of BBQ Sauce

Put the chicken into the crockpot and pour BBQ sauce over. Then cook on low for 4-6 hours or on high for 2-3 hours. Then shred chicken when still in the crockpot so it will be well coated with sauce.  Serve over rice or make into a delicious BBQ chicken sandwich.

French Bread Pizza

So this one is for those nights that you really have nothing to pull from. So easy!

Just cut the loaf in half length wise and add tomato sauce cheese and toppings. cook in 350' oven for 10-15 minutes or so and there you have it! Your pizza is ready to slice and serve!


Pizza is ready to go into the oven in 5 minutes. So fast!
 One topping that I learned from my sister-in-law was to cut up lunch meat. Yummy and great for when you don't have any pepperoni on hand.

quick fixins

So tonight was a rushed dinner, but I was SO hungry so I just threw some stuff together and it was delicious! I am sure you can add in many more things, but this is what I had for my quick dinner tonight.

So..
  I started with a package of crunched up Ramen Noodles without the seasoning and cooked them for a minute or 2 in just a little bit of water, enough to make them soft. ( I don't even know if this step was necessary, but I just wanted to make sure the noodles were soft.) Then I had some cooked left over chicken in the fridge and I cut it up into bite size pieces. (1/4 chicken breast) and then I put the chicken into a frying pan and poured a little Soy Vey over it. The BEST sauce EVER! Next I chopped one stalk of celery and 1/2 of a carrot. Then I just put everything in the frying pan with the chicken and cooked it till warm and tender. Mmmm. it hit the spot tonight. Not anything super amazing, but I thought I would share. :)

Dream Dinners!


Crispy Coconut Chicken with Jasmine Rice

    I have discovered a wonderful little place called Dream Dinners located just east of Maceys in Orem. I signed up at the Freedom Festival to go in and make 1 free freezer meal... and I loved it!
  So what they are is a business that is set up for you to go in and make quick, hassle free freezer meals. You go in and choose some meals to make from their menu while you try some yummy samples. When you have picked out what you like you start putting together your meals. I only made one trial meal while there but one meal took me only 2 minutes to assemble! They do their meals in 3 servings or 6 servings. It is restaurant quality food, so it is even tastier. The catch is that when you go in to make your meals you have to make at least 36 servings of food. So if you make 12  3 serving meals then you're good. It is a little pricey. The meals range from like 10- 33ish dollars/meal and their menu changes every month.
  When I got home and made my meal.. From frozen to on the table.. It took me about 35 minutes and I only dirtied 2 cooking dishes! It was so yummy! And such a fun experience!
 You can also do baby showers or parties there where everyone makes one or more meals then buys it and gives it as a gift to the expecting mother. That is the best idea EVER!! I love it! Dream Dinners is definitely somewhere to go for fast, healthy and delicious food. I just had to share it will you all!

Easy Cinnamon Rolls

I love this recipe! I got this one from a local elementary recipe book. Just a bunch of families put together their favorites.. now this is one of our favorites too. The book also had a yummy cake recipe that I will post soon. This recipe though is so nice because it doesn't take very long. You only have to let them rise for 10 minutes!
 DOUGH                                                    FILLING
1/3 Cup Sugar                                       1/2 Cup Brown sugar
2 Tbs. Yeast                                          1/2 Cup Sugar
1 1/4 Cups warm water                          2 Tbs. Cinnamon
1/2 Cup Butter (softened)                         FROSTING
3 Eggs                                                  2 Cups Powdered sugar
1/2 tsp. Salt                                          1/4 Cup Milk
5 Cups Flour                                        4 Tbs. Butter
                                                            1 tsp. Vanilla

In bowl combine first four ingredients. Cover and let set for 15 min. Add 3 eggs and 1/2 tsp. salt, stir together. Add 5 cups of flour. Knead for 5 min. Roll out and spread butter on dough. Combine brown sugar, sugar and cinnamon and sprinkle on buttered dough. Roll up and use unflavored dental floss to cut ( or you can use a knife). Set for 10 min. Bake at 400' for 10 min. Combine remaining ingredients and drizzle on warm rolls.

For the frosting you can also make a cream cheese frosting. I have always liked that better myself, but the frosting in this recipe is fast and yummy too.

Taco Soup

This is super fast to make, really yummy and filling.

1  can of Kidney beans
1  can of Corn
1  can of Chili con carne with beans
1  can of  French cut green beans

Open all of the cans and dump into a med. sauce pan. Cook over med. heat till warm. Before putting soup into bowls crunch up some Tortilla chips and put in the bottom of bowls. Now just serve and add toppings!

Toppings: grated cheese, sliced olives and sour cream.
